Shortbread Cookies

1 cup sugar

3 sticks butter

1 teaspoon vanilla

3 ½ cups flour

¼ teaspoon salt

 

Mix butter and sugar in a mixing bowl with the paddle attachment until smooth and lighter in color, about 5-6 minutes. Add vanilla and mix to combine. Sift the flour and the salt, then slowly add flour mixture to bowl. Mix to combine. Chill the dough for one hour.

When chilled, roll out the dough and cut into whatever shape you would like. Bake at 350 degrees for about 12 minutes, or until light golden brown.
